Grilled and Glazed Pork and Pineapple Kabobs
Serves: Four
Prep Time: 10 to 15 minutes
Cook Time: 10 to 15 minutes
Ingredients:
- Two pork tenderloins, cut into 1″ – 2″ pieces
- 1 sweet onion, cut into 1″ – 2″ pieces
- One fresh Pineapple, cut into 1″ – 2″ pieces
- ¼ cup fresh scallions, white only, chopped fine
Pork Seasoning:
- Kosher salt & fresh cracked black pepper
- Olive oil
Glaze:
- 1 ½ cups Hoisin sauce
- 2 cups Pineapple juice
- 2 tbls Rice vinegar
- 2 tsps Sesame oil
- 1 tsps Brown sugar
Directions:
- Pre-heat grill on high
- While the grill is heating, place the first four glaze ingredients into a saucepan and stir, bring just to a simmer. Do not boil the ingredients! Simmer, stirring frequently, until reduced to the consistency of a light syrup. Remove from the heat and add the brown sugar until it dissolves.
- On a serving plate make a bed of your favorite rice, top with grilled pork, onions & pineapple, drizzle glaze over dish and top with scallions
